Ton Rimbau, a winemaker from Penedès and founder of the winery bearing his name, is renowned for operating his vineyards like a forest using the permaculture system and producing non-intervention wines with organic certification. His first bottled wine was considered the second-best white wine in Spain by Jancis Robinson. The Porcellanic Vi Dolç Natural 2011 received 17.5 out of 20 points from Robinson, and the natural sweet wine of 2012 was endorsed by Josep Roca. Additionally, the magazine Omnivore named him the best winemaker of 2020. His wines are sold in prestigious restaurants such as El Celler de Can Roca, Noma, and Disfrutar, with distribution in 28 countries. Production is 10,000 bottles.
